Grandma Newsholmes Lemon Curd Recipe

Lemon Curd

Our chef at Bradley Fold Garden Centre would like to share another of his tasty recipes.  This one just in time for Christmas, is 'Grandma Newsholmes' lemon curd. 

This recipe only uses four ingredients but tastes really good. Perfect on warm buttered toast, a slice of wholemeal toast, pancakes, dolloped in a yoghurt  or spread on a Victoria sandwich as an alternative to jam.



  • 5  x  Fresh Bradley Fold eggs
  • 280g  x  Castor Sugar
  • 4 x Lemons ( juiced)
  • 180g  x  Butter (softened)


  1. Place sugar, eggs and lemon juice in a heat proof bowl and sit the bowl over a pan of gently simmering water on a medium heat. Make sure that the bottom of the bowl does not touch the water.
  2. Whisk continuously for 8 to 10 minutes until a light ribbon is created.
  3. Remove from heat and whisk in softened butter a little at a time until it is all absorbed.
  4. Allow to cool and then spoon into a sterilised jar and refrigerate

Add a label and a ribbon and you have a great gift for Christmas, home made lemon curd.

*To sterilise your jars, they should be washed in mild soapy water, rinsed and dried (or washed in the hot cycle of a dishwasher) Pop the jars on to a baking tray and carefully place in the oven heated to 160C/325F/Gas 3 for 10-15 minutes and heated in a medium oven for 5 minutes .
